Popsicle, freezer pop, ice lolly, ice pop... We have lots of names for these treats in English. Regardless of what you call them, they're a great weapon to have at hand against the heat of summer, especially in a city that gets as hot as Barcelona. For El Nacional's Desserts section, our bakers, Patricia and Cristina of Catalonia's La Noria Bakery, are this week not baking anything, they're instead showing us how to make ice pops with real raspberry. Healthy, cooling, easy-to-make, low-calorie, what more could you want?

Ingredients for 4 ice lollies:

  • water - 300 ml / 10 floz
  • sugar - 100 g / 1/2 cups
  • lemon juice - 150 ml / 5 floz
  • lime juice - 150 ml / 5 floz
  • raspberries - 150 g / 5.5 oz

Recipe:

  1. Pour the water and sugar into a saucepan
  2. Stir, then bring to the boil
  3. Once the water is boiling, take it off the heat and add the lemon and lime juice
  4. Separately, blend up the raspberries
  5. Add the raspberries to the saucepan and mix thoroughly
  6. Pour into ice pop moulds and add a stick to each
  7. Leave to freeze at least 5 hours
