This week, our favourite bakers, Patricia and Cristina of La Noria Bakery offer El Nacional the recipe for a good old muffin. A recipe to try with the kids this weekend, we've gone for two toppings: one batch gets sugar and cinnamon, the other gets chocolate chips.

Ingredients:

eggs - 3
sugar - 170g / 6oz / 0.75cups
milk - 65ml / 2oz / 0.25cups
flour - 215g / 8oz / 2 cups
oil - 180ml / 6oz / 0.75 cups
baking powder - 7g / 1.5 teaspoons
pinch of cinnamon
pinch of salt
zest of 1 lemon, grated

Recipe:

  1. Beat together the eggs and sugar
  2. Add the milk and mix in
  3. Slowly add and combine the oil
  4. Add and mix in the flour, salt and cinnamon
  5. Add and mix in the baking powder and lemon zest
  6. Leave the dough to rest in the fridge in a covered bowl for 1 hour
  7. Prepare your baking tray with the cases
  8. Fill the cases about half-way each
  9. Decorate with the chocolate chips or the cinnamon mixed with some more sugar, as you wish
  10. Bake in a pre-heated oven at 200ºC / 390ºF  for 15 minutes
  11. Remove and leave to cool
  12. Enjoy!
